Jakarta (ANTARA) – Potatoes are vegetables or tubers that are known to have many health benefits from head to toe, but what many people don’t realize is that the skin also has various properties.
Potatoes themselves consist of protein, fiber, calcium, iron, magnesium, phosphorus, potassium, sodium, zinc, copper, manganese, selenium, vitamins C and B and folate.
However, experts say not to eat potato skins that look green. This is because potatoes are tubers that grow underground.
When exposed to light or cold for longer, they start to produce chlorophyll as a natural process. This leads to the formation of the alkaloid solanine which gives potatoes a bitter taste and when consumed in larger amounts, can be toxic and can cause many digestive problems.
Potatoes also contain large amounts of solanine which cannot be destroyed by boiling but can be removed by frying them.

Good for heart health
According to a study, potato peels have strong radical scavenging or antioxidant activity due to the presence of two dominant phenolic compounds, chlorogenic acid and gallic acid.
These compounds can help maintain good heart health by reducing free radical damage to the heart. Potato skins also contain a large amount of potassium, which is a good element in regulating blood pressure in the body.
Has antibacterial and antifungal properties
Potato peels have strong antimicrobial compounds against various bacterial and fungal infections. This is due to the presence of terpene and flavonoid organic compounds in the skin.
Once consumed, it can help prevent infection and maintain one’s health. In addition, the bacteriostatic properties of potato peels are considered safe for use in the food processing industry as it naturally helps protect against foodborne pathogens and aids in food preservation.
Help heal wounds
Studies say that potato peel acts as a natural wound healer and can help heal wounds and prevent bacterial overgrowth in the affected skin area.
It has the ability to induce skin healing by promoting cell growth and providing tensile strength to injured skin. Potato peels are easy to get, less painful to apply and better than gauze.
Has antiviral properties
Potato peels have not only antibacterial and antifungal properties, but also antiviral properties against enteric viruses, human viruses that are mainly transmitted by the faecal-oral route, vomiting, direct person-to-person contact or through consumption of contaminated food or water.

According to one study, baked potatoes (1.08 mg) and microwaved potatoes (1.24 mg) with their skins on provide the maximum amount of iron for the body.
Another study states that potato skins contain 55 percent of iron from the total iron content of tubers. As we know that iron is an important component in maintaining the production and supply of red blood cells in the body, consumption of potato skins can help prevent or reduce the risk of related diseases such as anemia.

Potato peels are a staple food that are low in fat, high in energy and packed with many nutrients such as B vitamins, vitamin C, potassium and dietary fiber. Eating potato skins helps you stay energized and full longer, and also keeps calories in check
Anthocyanins are flavonoids that give fruits and vegetables their natural color. Tubers such as potatoes, especially red, yellow and purple have many important flavonoids that are associated with several health benefits.

A study has shown that when applied to necrosis-based wounds, potato peels can help treat them with various modalities, mainly due to the glycoalkaloid content in potatoes such as alpha chaconine and alpha solanine which act as toxic compounds for microorganisms.
